Mung Bean Sprouts

Not only are mung bean sprouts high in protein, vitamin C, and Folacin, they are low in salicylate. In Chinese medicine, mung bean sprouts are considered to be a yin or cooling food. Use in salads and stir-fries. Sprout in complete darkness or mung beans will have a bitter flavour. Rinse as often as possible and harvest at about 1.5 to 2 inches long.

Sprouts can be grown in any climate. They mature in 3–5 days, and can be planted any time of the year. They don’t require soil or sunshine, but they contain nearly as much vitamin C as tomatoes. Plus they produce no waste. Spent sprouting water is full of nutrients and can even be used to feed houseplants.
